The best rattlesnake I’ve ever cooked was actually out at hunting camp in eastern Montana. We bagged a couple of big snakes and built a rotisserie out of sticks.
Spices were lacking but we had some salt. I dried some sage brush out by the fire and rubbed the meat down with sage and salt.
I loaded the fire up with wet juniper which has the same smell as aromatic cedar, but since it was wet there was a nice thick smoke coming off the fire and not as much hot flame.
I slowly rotisseried the snake over the fire for about an hour. When it was done it was amazing, it carried the smokey flavor of the juniper and the sage very well and had the consistency of lobster.
Rattlesnake is some of the best meat out there and there is no end to the ways you can cook it!
Another favorite of mine is to slather it in BBQ sauce and simply grill it.
